Pumpkin Pie has always been my favorite holiday treat ever since I was a little kid, and now that I’ve found this recipe without dairy, wheat, or butter I can still eat it and LOVE it without gaining weight or feeling guilty!

This recipe is not only wheat and dairy free, but it is also RAW – meaning it still has all of it’s vitamins, minerals and enzymes that would have been destroyed in the cooking process.

Who would’ve ever thought that pumpkin pie could be a health-food! But here it is…

Ingredients for Filling:

1 1/2 c Pumpkin – (yep, just get a small pumpkin at the store and cut as fine as you can)

1 c Coconut Oil

1 c Honey

1 1/4 c Cashews

1 tsp Vanilla

2 TBS Orange Juice – (made by squeezing out a fresh, whole orange)

1/2 tsp Salt 1 tsp Cinnamon 1/2 tsp Nutmeg

Ingredients For Crust:

2 c Brazil Nuts, Almonds Or Macadamia Nuts – (your choice or a combination of all three)

1/4 c Honey

1/2 tsp Salt

1 TBS Coconut Oil

Directions:

1. Clean and cut pumpkin as fine as you can

2. Blend all the ingredients for the filling in a blender at high speed

3. Finely chop the nuts for your crust (preferably in a food processor)

4. Mix all the ingredients for the crust together in a large mixing bowl

5. Take a regular pie baking pan (can use the plastic or metal kind) and coat the crust mixture into bottom of pan making a layer on the bottom and up the sides of the pan

6. Pour in filling mixture onto top of crust

7. 2 hours in freezer and serve!~

Toppings: (optional)

Blend raspberries and agave syrup together and drizzle over top of pie before serving
